Whether you’re going gluten free or paleo, you don’t have to give up comfort food.
Case in point are these easy and yummy pancakes made with almond flour and bananas. The benefits of using almond flour and bananas over regular flour and sugar means that these pancakes are a little better for you with a lower glycemic index.
1 cup almond flour
1/2 ripe banana (sliced)
2 tablespoons oil or milk (we use soy milk).
Mix all ingredients till blended well. This recipe works well when a whisk or mixer is used to incorporate the banana slices.
Cook pancakes on medium heat or heat slightly lower than you would normally use for regular pancakes.
Scoop ¼ cupfuls into medium hot skillet.
Makes about 6-7 pancakes.
These taste great with just a little spread like Earthbalance and sprinkle of stevia powder.
So, don’t give up your pancakes when trying to eat a little better. With a few changes, these are a great addition to any eating plan.
